This is my approach to measure the temperature of my pool: a swimming thermometer.
It houses a 16340 battery at the bottom which is fixed with the small piece and is connected with some copper tape. For electronics I used an Arduino pro mini and a RFM95W module to connect to the TheThingsNetwork via LoRa. At the bottom a DS18B20 perfectly fits and can be secured with glue. I used PTFE tape to make the screwed cap water tight.
